We are fully in fall – finally – my friends. It’s even supposed to be a mix of rain and snow next week here in Washington (it’ll change 8 times between now and then though).
I’m a big warm food lover when the weather turns cold. And soups are a big hit for me. This Taco soup recipe is lower calorie, fairly even in carbs and protein, and super filling! Especially when you add some tortilla chips.
You can add spicy elements to give it a kick. Or you can add corn, if you’re a corn fan. I’m a raging disappointment to the corn kid, so I leave it out.
I add shredded cheese, sour cream and Juanita’s chips (because they’re the best!).
